Our beef is a totally natural product. Our Scottish Highland steers eat only fresh pasture forage, hay, and minerals. We do not give our steers hormones, antibiotics, pesticides, pour-on or internal wormers, feed additives, or animal by products. We do not use herbicides on our pasture. We promote the growth of natural forage plants. Our grass-fed beef is naturally lean with less total fat and saturated fat than grain-fed beef. Our animals are slaughtered at the peak of the grass season, providing the most nutritious forage and best overall meat texture and taste. Grass-fed beef has a higher proportion of omega 3 fatty acids than grain fed beef and it has more vitamins A, E, beta carotene. Additionally grass fed beef is rich in conjugated linoleic acid which may contribute to health. Our animals are pampered in a low stress and lush pasture environment. They are not confined. This improves meat quality. Our butcher is a USDA inspected facility conforming to standards. It is monitored by the USDA to assure safe meat processing. Our beef is dry aged, which tenderizes beef and adds flavor. It is a more time intensive and more expensive process. Most grocery stores sell wet aged beef - beef that is vacuum packed in plastic.
