We sell Holiday Valley Beef in whole, half, or quarter sizes. We do not sell individual cuts of beef. Our price is based on the hanging weight of the animal and the size of your order. The butcher charges a fee for trimming and cutting based on the hanging weight. Hanging weight is the weight of the animal after slaughter with skin, horns, internal organs removed. Because animals vary in size, hanging weights also vary. The hanging weight of a whole beef is approximately 600 pounds. The hanging weight of the halves and quarters will be approximately 300 pounds and 150 pounds respectively. Please note that dry aging, cutting, trimming, and boning will reduce your “take home meat” weight by about 30% from the original hanging weight. |
